Ingredients
- 8 oz whole wheat pasta
- 8 oz mushrooms, sliced
- 1 zucchini, chopped
- 2 cloves garlic, minced
- 1/4 cup low-sodium vegetable broth
- 1/2 cup raw walnuts
- 1/4 cup nutritional yeast
- 1/2 tsp garlic powder
- Salt to taste
Instructions
- Cook pasta. Sauté zucchini, mushrooms, and garlic in broth.
- Blend walnuts, nutritional yeast, garlic powder, and salt for "parm".
- Combine pasta with veggies. Top with walnut parm.
