Zucchini Mushroom Pasta with Walnut "Parmesan"

Whole wheat pasta tossed with savory sautéed vegetables and topped with a homemade walnut-based parmesan.

Ingredients

  • 8 oz whole wheat pasta
  • 8 oz mushrooms, sliced
  • 1 zucchini, chopped
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium vegetable broth
  • 1/2 cup raw walnuts
  • 1/4 cup nutritional yeast
  • 1/2 tsp garlic powder
  • Salt to taste

Instructions

  • Cook pasta. Sauté zucchini, mushrooms, and garlic in broth.
  • Blend walnuts, nutritional yeast, garlic powder, and salt for "parm".
  • Combine pasta with veggies. Top with walnut parm.
