Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt to taste
  • Cooked brown rice or quinoa (for serving)
  • Optional toppings: salsa, avocado, shredded cabbage

Instructions

  • Roast sweet potatoes at 425°F for 25 minutes until tender.
  • Warm black beans in a pan with spices and a splash of water.
  • Assemble bowls with rice, roasted sweet potatoes, black beans, and toppings of choice.
