Ingredients
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt to taste
- Cooked brown rice or quinoa (for serving)
- Optional toppings: salsa, avocado, shredded cabbage
Instructions
- Roast sweet potatoes at 425°F for 25 minutes until tender.
- Warm black beans in a pan with spices and a splash of water.
- Assemble bowls with rice, roasted sweet potatoes, black beans, and toppings of choice.
