Spinach Artichoke Dip
A creamy, oil-free cold dip made with artichokes and spinach in a cashew-based sauce. Perfect for parties, snacks, or sandwiches.

Ingredients
- 12 oz bag frozen artichoke hearts, thawed and roughly chopped
- 2–3 handfuls fresh spinach (about 2 cups), finely chopped
- 1/2 cup raw cashews (or white beans for a lighter version)
- 1/4 cup water (more as needed)
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1–2 cloves garlic
- 2 tbsp nutritional yeast
- 1/2 tsp salt (optional)
- Pinch of crushed red pepper flakes (optional)
Instructions
- Blend cashews, water, lemon juice, apple cider vinegar, garlic, nutritional yeast, and salt until smooth.
- Stir in thawed and chopped artichokes and fresh spinach.
- Serve with sliced veggies, whole grain crackers, or toasted pita.
- If serving cold, chill until chilled enough. If serving hot, simmer on stovetop until heated through.
