Ingredients
- 2 cups cooked or canned chickpeas
- 2 medium potatoes, diced
- 1/2 cup onion, diced
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp chili flakes
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Splash of water or veggie broth for sautéing
Instructions
- Steam or boil potatoes until just tender.
- In a skillet, sauté onion in water or broth until translucent.
- Add chickpeas, potatoes, and spices. Cook until browned and slightly crispy.
- Serve on its own, over greens, or wrapped in a tortilla.
