Spicy Chickpea & Potato Skillet

One-pan magic with crispy potatoes, chickpeas, and smoky spices. Great in a bowl or wrap.

Ingredients

  • 2 cups cooked or canned chickpeas
  • 2 medium potatoes, diced
  • 1/2 cup onion, diced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp chili flakes
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Splash of water or veggie broth for sautéing

Instructions

  • Steam or boil potatoes until just tender.
  • In a skillet, sauté onion in water or broth until translucent.
  • Add chickpeas, potatoes, and spices. Cook until browned and slightly crispy.
  • Serve on its own, over greens, or wrapped in a tortilla.
