Southwest Sweet Potato Skillet
A hearty one-pan dish of sweet potatoes, black beans, and tomatoes seasoned with warm southwest spices.

Ingredients
- 2 medium sweet potatoes, diced
- 1/2 yellow onion, chopped
- 1 can black beans, drained and rinsed
- 1 can fire-roasted diced tomatoes
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
- Splash of veggie broth (to sauté)
Instructions
- Sauté onion and sweet potato with broth until tender.
- Stir in beans, tomatoes, and spices. Simmer for 5–10 min.
