Smoky Chickpea Pasta Bake

A warm, smoky pasta bake with chickpeas and fire-roasted tomatoes—great for leftovers and big appetites.

Ingredients

  • 8 oz whole wheat pasta
  • 1 can chickpeas, drained and rinsed
  • 1 can fire-roasted diced tomatoes
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1/2 tsp chili flakes (optional)
  • Salt & pepper
  • 1/4 cup nutritional yeast (optional)

Instructions

  • Cook pasta and preheat oven to 375°F.
  • Sauté onion and garlic in a pan until softened.
  • Add chickpeas, tomatoes, and spices. Simmer for 7 minutes.
  • Mix with pasta and transfer to a baking dish.
  • Top with nutritional yeast if using. Bake uncovered for 15–20 minutes.
