Smoky Chickpea Pasta Bake
A warm, smoky pasta bake with chickpeas and fire-roasted tomatoes—great for leftovers and big appetites.

Ingredients
- 8 oz whole wheat pasta
- 1 can chickpeas, drained and rinsed
- 1 can fire-roasted diced tomatoes
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp oregano
- 1/2 tsp chili flakes (optional)
- Salt & pepper
- 1/4 cup nutritional yeast (optional)
Instructions
- Cook pasta and preheat oven to 375°F.
- Sauté onion and garlic in a pan until softened.
- Add chickpeas, tomatoes, and spices. Simmer for 7 minutes.
- Mix with pasta and transfer to a baking dish.
- Top with nutritional yeast if using. Bake uncovered for 15–20 minutes.

Microwave
Microwave individual portions for 2–3 minutes.
