Pasta Primavera with Lemon-Garlic Sauce

Ingredients
- 8 oz whole wheat pasta
- 1 zucchini, chopped
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, peeled and sliced
- 2 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 tbsp tahini
- 2 tbsp water
- 1 tsp Dijon mustard (optional)
- Salt & black pepper
Instructions
- Roast or sauté chopped vegetables until tender.
- Cook pasta and drain.
- Mix lemon juice, zest, tahini, water, garlic, and mustard to make a sauce.
- Toss pasta, veggies, and sauce together.
- Store in airtight container; tastes great cold or reheated.
Reheating
Stovetop
Heat in a skillet with a splash of water until warm.
Microwave
Microwave for 1–2 minutes until heated through.
