Pasta Primavera with Lemon-Garlic Sauce

Ingredients

  • 8 oz whole wheat pasta
  • 1 zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, peeled and sliced
  • 2 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1 tbsp tahini
  • 2 tbsp water
  • 1 tsp Dijon mustard (optional)
  • Salt & black pepper

Instructions

  • Roast or sauté chopped vegetables until tender.
  • Cook pasta and drain.
  • Mix lemon juice, zest, tahini, water, garlic, and mustard to make a sauce.
  • Toss pasta, veggies, and sauce together.
  • Store in airtight container; tastes great cold or reheated.
