Ingredients
- 1 cup cooked lentils (or 1 can, drained and rinsed)
- 1/2 onion, chopped
- 1 red bell pepper, chopped
- 1 can fire-roasted diced tomatoes
- 1 tbsp tomato paste
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- Salt to taste
- Corn tortillas or lettuce cups for serving
Instructions
- Sauté onion and pepper in a splash of water until soft.
- Add spices and tomato paste; cook 1 minute.
- Stir in lentils and tomatoes; simmer 10 minutes.
- Serve in tortillas or lettuce cups with optional toppings.
