Ingredients
- 3 cups mashed potatoes
- 1 cup cooked lentils
- 1 carrot, diced
- 1 celery stalk, diced
- 1 cup peas
- 1 onion, chopped
- 1 tbsp tomato paste
- 1 cup vegetable broth
- 1 tsp thyme
Instructions
- Sauté onion, carrot, celery until soft. Stir in tomato paste and thyme.
- Add cooked lentils, peas, and broth. Simmer until thickened.
- Layer lentil mixture in a baking dish and top with mashed potatoes.
- Bake at 375°F for 20–25 minutes or until golden.
