Ingredients

  • 3 cups mashed potatoes
  • 1 cup cooked lentils
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 cup peas
  • 1 onion, chopped
  • 1 tbsp tomato paste
  • 1 cup vegetable broth
  • 1 tsp thyme

Instructions

  • Sauté onion, carrot, celery until soft. Stir in tomato paste and thyme.
  • Add cooked lentils, peas, and broth. Simmer until thickened.
  • Layer lentil mixture in a baking dish and top with mashed potatoes.
  • Bake at 375°F for 20–25 minutes or until golden.
