Creamy White Bean & Kale Skillet

A creamy, comforting skillet dish made with white beans and kale in a lemony garlic sauce.

Ingredients

  • 2 cans white beans (15 oz each), drained and rinsed
  • 1 bunch kale, de-stemmed and chopped
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1/2 cup veggie broth
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  • Sauté onion and garlic in broth until soft.
  • Add kale and cook until wilted, about 3–5 minutes.
  • Stir in beans, thyme, lemon juice, and remaining broth.
  • Simmer uncovered 10–15 minutes until creamy and thickened.
  • Season with salt and pepper.
