Creamy White Bean & Kale Skillet
A creamy, comforting skillet dish made with white beans and kale in a lemony garlic sauce.

Ingredients
- 2 cans white beans (15 oz each), drained and rinsed
- 1 bunch kale, de-stemmed and chopped
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 cup veggie broth
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Sauté onion and garlic in broth until soft.
- Add kale and cook until wilted, about 3–5 minutes.
- Stir in beans, thyme, lemon juice, and remaining broth.
- Simmer uncovered 10–15 minutes until creamy and thickened.
- Season with salt and pepper.
Reheating
Stovetop
Heat in a skillet over medium with a splash of broth or water.
Microwave
1–2 minutes per serving, stir halfway.
