Creamy Tomato & Spinach Pasta
A comforting and creamy tomato pasta made with cashew sauce and spinach. Perfect for meal prep.

Ingredients
- 8 oz whole wheat pasta
- 1 can (15 oz) diced tomatoes
- 2 cups fresh spinach (or 1 cup frozen)
- 1/2 cup raw cashews (soaked if needed)
- 3/4 cup water
- 1 tbsp lemon juice
- 2 cloves garlic
- 1 tsp Italian seasoning
- Salt & pepper to taste
Instructions
- Cook pasta according to package instructions.
- Blend cashews, water, lemon juice, garlic, and salt until smooth.
- In a pan, cook diced tomatoes and spinach with Italian seasoning for 3–5 minutes.
- Stir in cashew cream and cooked pasta. Simmer to thicken.
- Cool and store in fridge for up to 4 days.
