Creamy Tomato & Spinach Pasta

A comforting and creamy tomato pasta made with cashew sauce and spinach. Perfect for meal prep.

Ingredients

  • 8 oz whole wheat pasta
  • 1 can (15 oz) diced tomatoes
  • 2 cups fresh spinach (or 1 cup frozen)
  • 1/2 cup raw cashews (soaked if needed)
  • 3/4 cup water
  • 1 tbsp lemon juice
  • 2 cloves garlic
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  • Cook pasta according to package instructions.
  • Blend cashews, water, lemon juice, garlic, and salt until smooth.
  • In a pan, cook diced tomatoes and spinach with Italian seasoning for 3–5 minutes.
  • Stir in cashew cream and cooked pasta. Simmer to thicken.
  • Cool and store in fridge for up to 4 days.
