Creamy Tahini Chickpea Bowls

Roasted chickpeas and veggies served over rice or quinoa, topped with a lemony tahini dressing.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 zucchini, chopped
  • 1/2 red onion, sliced
  • 1 cup cooked brown rice or quinoa
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 2–3 tbsp water to thin
  • Salt and pepper to taste

Instructions

  • Roast or sauté vegetables until tender.
  • Mix tahini, lemon juice, vinegar, garlic powder, salt, and water into a creamy dressing.
  • Assemble bowl with grain base, chickpeas, veggies, drizzle dressing.
