Creamy Tahini Chickpea Bowls
Roasted chickpeas and veggies served over rice or quinoa, topped with a lemony tahini dressing.

Ingredients
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 zucchini, chopped
- 1/2 red onion, sliced
- 1 cup cooked brown rice or quinoa
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp apple cider vinegar
- 1 tsp garlic powder
- 2–3 tbsp water to thin
- Salt and pepper to taste
Instructions
- Roast or sauté vegetables until tender.
- Mix tahini, lemon juice, vinegar, garlic powder, salt, and water into a creamy dressing.
- Assemble bowl with grain base, chickpeas, veggies, drizzle dressing.
