Creamy Red Lentil Curry

Ingredients
- 1 cup red lentils
- 1 can light coconut milk
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp turmeric
- 2 cups water or broth
- Salt to taste
- Fresh cilantro (optional)
Instructions
- Sauté onion and garlic in a splash of broth until soft.
- Add curry powder and turmeric, stir until fragrant.
- Add red lentils, coconut milk, and water or broth.
- Simmer 20–25 min until lentils are soft. Add salt to taste.
- Top with fresh cilantro if using.
