Ingredients
- 8 oz whole grain pasta
- 1/2 cup raw cashews (or 3/4 cup cooked white beans)
- 1 cup unsweetened plant milk
- 2 tsp lemon juice
- 1 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt (optional)
- 8 oz mushrooms, sliced
- Black pepper and fresh herbs (e.g., thyme or parsley) to taste
Instructions
- Blend cashews (or white beans), plant milk, lemon juice, nutritional yeast, garlic powder, onion powder, and salt until smooth.
- In a skillet, sauté mushrooms with a splash of water until browned and tender.
- Add the sauce and heat through, stirring to combine.
- Toss in the cooked pasta and mix well to coat.
- Season with black pepper and garnish with herbs.
