Ingredients

  • 8 oz whole grain pasta
  • 1/2 cup raw cashews (or 3/4 cup cooked white beans)
  • 1 cup unsweetened plant milk
  • 2 tsp lemon juice
  • 1 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt (optional)
  • 8 oz mushrooms, sliced
  • Black pepper and fresh herbs (e.g., thyme or parsley) to taste

Instructions

  • Blend cashews (or white beans), plant milk, lemon juice, nutritional yeast, garlic powder, onion powder, and salt until smooth.
  • In a skillet, sauté mushrooms with a splash of water until browned and tender.
  • Add the sauce and heat through, stirring to combine.
  • Toss in the cooked pasta and mix well to coat.
  • Season with black pepper and garnish with herbs.
