Creamy Greek Pasta Salad

A refreshing Greek-inspired pasta salad tossed in a creamy, herbed cashew dressing. Perfect as a main or side dish.

Ingredients

  • 8 oz whole grain rotini, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • ½ cup mild banana pepper rings, drained
  • ½ cup sliced kalamata olives (rinse if salty)
  • 1 cup chopped cucumber (optional but recommended)
  • ¼ cup diced red onion (optional)
  • ¼ cup chopped fresh parsley or dill (optional, for brightness)
  • ½ cup raw cashews (soaked in hot water 10–15 min if not using high-speed blender)
  • ½ cup water
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic
  • 1 tsp dried oregano
  • ½ tsp salt (adjust to taste)
  • Fresh black pepper, to taste

Instructions

  • Cook pasta, rinse with cold water, and drain well.
  • Blend cashews, water, vinegar, mustard, garlic, oregano, salt, pepper to create the dressing.
  • Toss pasta with tomatoes, banana peppers, olives, cucumber, onion, and dressing.
  • Chill for at least 30 minutes before serving.
