Creamy Greek Pasta Salad

Ingredients
- 8 oz whole grain rotini, cooked and cooled
- 1 cup cherry tomatoes, halved
- ½ cup mild banana pepper rings, drained
- ½ cup sliced kalamata olives (rinse if salty)
- 1 cup chopped cucumber (optional but recommended)
- ¼ cup diced red onion (optional)
- ¼ cup chopped fresh parsley or dill (optional, for brightness)
- ½ cup raw cashews (soaked in hot water 10–15 min if not using high-speed blender)
- ½ cup water
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic
- 1 tsp dried oregano
- ½ tsp salt (adjust to taste)
- Fresh black pepper, to taste
Instructions
- Cook pasta, rinse with cold water, and drain well.
- Blend cashews, water, vinegar, mustard, garlic, oregano, salt, pepper to create the dressing.
- Toss pasta with tomatoes, banana peppers, olives, cucumber, onion, and dressing.
- Chill for at least 30 minutes before serving.
