Ingredients

  • 8 oz whole wheat pasta
  • 2 cups broccoli florets
  • 1/2 cup raw cashews (soaked if needed)
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1 tbsp nutritional yeast
  • 1 cup water or unsweetened plant milk
  • Salt and pepper to taste

Instructions

  • Boil pasta and broccoli together until tender. Drain.
  • Blend cashews, garlic, lemon, nutritional yeast, and water until smooth.
  • Combine pasta, broccoli, and sauce in a pan. Heat gently.
  • Season to taste and serve warm.
