Chili-Stuffed Sweet Potatoes

Ingredients
- 4 medium sweet potatoes
- 1 can black beans
- 1 can diced tomatoes
- 1/2 cup corn
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt to taste
Instructions
- Bake sweet potatoes at 400°F (200°C) for 40 minutes until tender.
- While baking, combine beans, tomatoes, corn, and spices in a pan and simmer for 15 minutes.
- Split sweet potatoes and stuff with chili mixture.

2 minutes per sweet potato.
