Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 cup frozen corn
  • 1 can diced tomatoes (fire-roasted if possible)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt to taste
  • Optional: avocado slices, fresh cilantro, lime wedges

Instructions

  • In a large skillet, sauté onion and bell pepper in a splash of water until soft.
  • Add chickpeas, corn, diced tomatoes, and all spices. Stir well.
  • Simmer for 10 minutes until flavors meld.
  • Serve with brown rice, whole grain tortillas, or on a bed of greens.
