Chickpea Taco Skillet

Ingredients
- 1 can chickpeas, drained and rinsed
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup frozen corn
- 1 can diced tomatoes (fire-roasted if possible)
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt to taste
- Optional: avocado slices, fresh cilantro, lime wedges
Instructions
- In a large skillet, sauté onion and bell pepper in a splash of water until soft.
- Add chickpeas, corn, diced tomatoes, and all spices. Stir well.
- Simmer for 10 minutes until flavors meld.
- Serve with brown rice, whole grain tortillas, or on a bed of greens.
