BBQ Lentil Meatballs with Mashed Potatoes

Smoky lentil meatballs baked in BBQ sauce and served with creamy mashed potatoes. A WFPB comfort food favorite.

Ingredients

  • 1.5 cups cooked green or brown lentils
  • 1/2 cup rolled oats
  • 1 tbsp ground flax + 3 tbsp water
  • 2 cloves garlic, minced
  • 1/2 small onion, finely chopped
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup oil-free BBQ sauce
  • 3–4 cups mashed potatoes (prepared oil-free)

Instructions

  • Preheat oven to 375°F (190°C).
  • Mix flax and water, let sit 5 minutes.
  • Mash lentils slightly, then combine with oats, onion, garlic, paprika, flax mix, salt and pepper.
  • Form into small balls and place on lined baking sheet.
  • Bake 20 minutes, then brush with BBQ sauce and bake 10 more minutes.
  • Serve with mashed potatoes and extra BBQ sauce.
