Ingredients

  • 2 carrots, chopped
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, chopped
  • 1 tbsp balsamic vinegar
  • 1.5 cups cooked quinoa
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 425°F (220°C).
  • Toss chopped veggies with balsamic vinegar, garlic powder, salt, and pepper.
  • Roast for 25–30 min until caramelized.
  • Serve over cooked quinoa.
