Ingredients
- 2 carrots, chopped
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 red onion, chopped
- 1 tbsp balsamic vinegar
- 1.5 cups cooked quinoa
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Toss chopped veggies with balsamic vinegar, garlic powder, salt, and pepper.
- Roast for 25–30 min until caramelized.
- Serve over cooked quinoa.
