Ingredients
- 1 can chickpeas, rinsed and patted dry
- 1/4 cup rolled oats
- 1/4 cup chopped parsley
- 2 cloves garlic
- 1 tsp cumin
- 1/2 tsp coriander
- Juice of 1/2 lemon
- Salt to taste
- Mixed greens, tomato, cucumber, lemon-tahini dressing (for serving)
Instructions
- Pulse all falafel ingredients in a food processor until chunky and well combined.
- Form into patties or balls and place on parchment-lined baking sheet.
- Bake at 400°F for 25 minutes, flipping halfway through.
