Ingredients

  • 1 can chickpeas, rinsed and patted dry
  • 1/4 cup rolled oats
  • 1/4 cup chopped parsley
  • 2 cloves garlic
  • 1 tsp cumin
  • 1/2 tsp coriander
  • Juice of 1/2 lemon
  • Salt to taste
  • Mixed greens, tomato, cucumber, lemon-tahini dressing (for serving)

Instructions

  • Pulse all falafel ingredients in a food processor until chunky and well combined.
  • Form into patties or balls and place on parchment-lined baking sheet.
  • Bake at 400°F for 25 minutes, flipping halfway through.
  • Serve in bowls with greens, chopped veggies, and drizzled dressing.
